Also know as Mirasol (the fresh version), this mild pepper is a staple in Mexican cuisine. Harvest when 3-6″ pods change from green to reddish brown, then dry for later use. The Guajillo is rich, slightly sweet and smoky. It’s mild-medium heat level (2,500-5,000 SHU) makes it an enjoyable addition to salsas, mole and other Mexican inspired dishes. Plants are compact (2-3′ tall) and high-yielding.
