But Pico de Gallo is also the name of a chile from the State of Sonora, Mexico that is used in making fresh salsa. Similar in heat to a serrano of chile de Arbol it heats up quick but fades fast. It has a fresh fruitiness and will add much flavor to any dish you cook. The Pico de Gallo peppers are slender and are under a 1/4 inch wide and 2 to 3 inches in length. They ripen from green to red. The Pico de Gallo chile plants grow over 4 feet tall.”
