“(Capsicum annuum)-The Santa Fe Chocolate pepper comes to us from fellow growers Sandra Tipton and Jes Christiansen. They do not know its country of origin, but it is most likely Mexico or Central America. The Santa Fe Chocolate chiles ripen from green to a rich dark brown and have a smoky sweet flavor. They average about 6 inches in length and over an inch in width. The flesh is thick enough for roasting but must be picked as it starts to turn brown if you wish to prepare it in this manner. Otherwise it is more suitable for drying and then used to flavor sauces, mole sauces, salsa and meat rubs.
